Product Description
This product is obtained by combining red wine vinegar from local grapes with Vincotto, and aging it in oak barrels for at least 8 years. Vincotto is a unique condiment based on a traditional recipe strictly guarded for generations by the Calogiuri family in very Southern part of Apulia. It is obtained by two different kinds of local grapes Negramaro e Malvasia Nera, that are left to dry first and the boiled very softly for over 24 hours until it is reduced to one fifth of its initial volume. The outcome is then aged in small oak barrels.
Ideal for flavoring soups, cheeses and fruit salads. Recommended also on desserts and ice- creams.
