It consists of waiting that the oil comes to the surface separating from water out of the liquid generated by cold crushed olives left in specific containers. The “floating” oil is then collected by hand with special jugs. The result is a particularly fresh and delicate olive oil. Vincotto is a unique condiment based on a traditional recipe strictly guarded for generations by the Calogiuri family in very Southern part of Apulia. It is obtained by two different kinds of local grapes Negramaro e Malvasia Nera, that are left to dry first and the boiled very softly for over 24 hours until it is reduced to one fifth of its initial volume. The outcome is then aged in small oak barrels.
